Pizza Grilled Cheese

I’ve been trying to think of new school lunch ideas for Riley. He’s not much of a sandwich kid. He does however love anything cheese related. I didn’t want him getting bored with just a regular grilled cheese so I decided to make a pizza one. Super easy to make and you could really make it any type of pizza you wanted. I went with the classic cheese and pepperoni with red sauce.

Using my new fave, Whole Foods Gluten Free Sandwich Bread, I started to assemble the sandwich. I lighted buttered the slice of bread so it wouldn’t stick to my skillet. (I really do need to invest in some good cookware one of these days.) Then I did a layer of shredded cheese, a layer of sauce, a layer of pepperoni and then another layer of cheese before adding the other slice of bread.

Grill on both sides until nicely golden and the cheese is melty.

Cut & enjoy! Riley and I ate them for lunch the other day as a test run before being added to the school lunch menu. He inhaled it and asked for a second one. They were a hit. Ry took one for lunch the day the rest of the kids were having pepperoni rolls. When he came home, he told me that it was just as good at lunch time and not at all soggy like other sandwiches. He asked me if I could make him a grilled cheese like our bacon ranch pizza. This kid might be onto something.
