Old Bay Chip Crusted Chicken

I love chicken and I love to use Old Bay seasoning with it.  One day while eating some Herr’s Old Bay chips, I saw a recipe on the back of the bay for crab cakes that used crushed chips in it. I got the idea to used crushed chips to crust the chicken strips.

Its super simple but gives a nice bold spicy bite to the chicken. I just tossed some chips into the food processor till the chips were about the size of bread crumbs. I dusted the chicken strips with some of the WCWBF’s flour mix and dredged the chicken in a egg & milk mixture. Then I coated both sides of the chicken with the Old Bay chip crumbs. After coating the chicken strips, I placed them on a cookie sheet that had a thin layer of olive oil on it. I baked them at 375° for 10 minutes before flipping them and baking another 8-10 minutes. I just kept an eye on how golden they got.

Everyone that was home the night I made these loved them. Even Riley who normally doesn’t like too much spice said it was really good. He did use ranch because “it cools the heat of the chip chicken mom”.  I think this would be a great meal for a busy Valentine’s Day. Who doesn’t want a a little spice to their life? ;)

Herr's Old Bay Chip Crusted Chicken [Gluten Free]


WCWBF's Flour Mix



Chicken Strips

Old Bay Chips


Preheat the oven to 375°
Crush the chips (by food processor or rolling pin to the bag)
Dust chicken strips with WCWBF's flour mix
Dredge chicken in egg & milk mixture
Coat both sides of the chicken strips with crushed chips
Bake for 10 minutes on a cookie sheet that is lightly coated with olive oil
Flip chicken strips and back on the other side for another 8-10 minutes
