Chocolate Covered Peanut Butter Pretzels

Happy National Pretzel Day!

When I first read that it was National Pretzel Day I instantly thought of Stanley from the Office.


My favorite type of pretzel is the big beer pretzel. The ones you feel like you are gonna break a tooth on. Sadly there isn’t a gluten free version of them. My second favorite is chocolate covered peanut butter pretzels. We eat pretzels quite a bit here. Ry likes the soft pretzels for movie night snack. I love using pretzels as “breading” on pork chops.

I use to love Ben & Jerry’s Chubby Hubby with the peanut butter filled chocolate covered pretzels. Sadly not only are the pretzels in it not gluten free but it is a malted ice cream. A few weeks ago, I saw it in the store again and thought about how I missed it. And how I wish there was a gluten free peanut butter pretzel. I turned the aisle and came across Gratify’s Sea Salt Thins. I knew I could use them for something.


They are perfect for spreading peanut butter on. Riley loved them. As we were snacking on them I decided to chocolate cover them. And I’m so glad I did. It is super easy to do. I had some chocolate melts still so I used those. I put them in a microwave safe coffee mug and melted them in the microwave. I made sure the mug wasn’t dead center and stirred the chocolates every 30 seconds till melted.


I just eyeballed the amount of pb I spread on the pretzel thins before sandwiching them together. Then I used a fork to lower it into the chocolate. I flipped it before pulling it out of the mug and placing it on parchment paper to set. After I had all my pretzels chocolate covered, I put the tray into the freezer for a few minutes to help set the chocolate quicker.


Chocolate Covered Peanut Butter Pretzels


Gratify Sea Salt Thins

Peanut Butter

Chocolate candy melts


Pretzel Prep
Spread a bit of peanut butter onto a Sea Salt Thin
Place another Sea Salt Thin on top forming a sandwich
Chocolate Prep
Place chocolate melts (or chips) in a microwave safe dish
Place dish off center in the microwave (so its not in direct line of the most heat)
Microwave for 30 seconds at a time, stirring to prevent burning
Lower peanut butter pretzel thin sandwiches into melted chocolate
Flip with a fork to coat both sides
Tap gently on side of dish to get rid of excess chocolate
Place on parchment paper/wax paper or silplat mat to all chocolate to set
Place tray in freezer to firm up chocolate
