100th Post | Biscuits

Wow, Can’t believe I’m about to write my 100th blog post. Feels like I was just sitting down to write my first one. I’m excited to see how the blog continues to grow and I’m excited for the up coming recipes this year.

I missed biscuits so this weekend I decided to make us some biscuits since we were getting over a stomach bug. A yummy but gentle on the tummy treat. I decided to try Fabio Viviani’s Yes Maam is Biscuits recipe from his 2nd breakfast e-book.

Really easy recipe to make and I’ve been wanting to do this post since Sunday. However, I’ve been insanely busy between not feeling 100%, working more hours and spending a ton of time at a car dealership. After an emotional roller coaster, this baby is mine :) 

I have wanted a VW Beetle since before I could drive and before this model was even out. I’m beyond thrilled to finally own one. Finalizing the deal today puts a happy spin on this date. For the last 4 years this date has crippled me as it is the day that I lost my mother to Ovarian cancer. 

She would be so thrilled that I finally got a Beetle. And she would be right there in the kitchen with my baking gluten free biscuits.

Just a few simples steps and you’ll have tasty biscuits. Mix the milk & oil. And then add them to the dry ingredients you already mixed in medium size bowl. Bring together using a wooden spoon.

It will be kinda lumpy looking like the photo above. Spoon mixture out onto a lightly floured surface. Kneaded it together till its smooth. Roll 3?4 inch thick and cut with a biscuit cutter. 

Bake at 475 for 10 minutes.  Enjoy!

Biscuits [Gluten Free]

Ingredients

2 cups WCWBF's flour mix

1.5 teaspoon of salt

3 teaspoon baking powder

1 teaspoon of sugar

1/3 cup of Bertolli Light Tasting Olive Oil (or any kind of light olive flavor oil)

2/3 cup of milk (I used probably another tablespoon or two of milk so that it came together a bit better.)

Instructions

Mix the milk & oil.
And then add them to the dry ingredients you already mixed in medium size bowl. Bring together using a wooden spoon.
Spoon mixture out onto a lightly floured surface. Kneaded it together till its smooth.
Roll 3?4 inch thick and cut with a biscuit cutter.
Bake at 475 for 10 minutes.

* The flour mix used for this recipe had no xanatham or guar gum in it. Just the flours and starches listed in the flour mix recipe.*
